Vegan Scalloped Potatoes | easy recipe!

Today we are making vegan scalloped potatoes! The perfect creamy, l cheesy side dish for any holiday dinner. Get the recipe below and don’t forget to check out my cookbook here: https://itslivb.com/cookbook

♡Recipe:
1 onion, finely chopped
4 lbs potatoes, thinly sliced
1/3 cup vegan butter
1/3 cup all-purpose flour
1-1/2 cups nondairy milk
2 cups vegan chicken broth (or vegetable broth)
1/4 cup nutritional yeast
1 tsp salt
black pepper to taste
paprika (optional to sprinkle overtop)
1 cup vegan cheese, for sprinkling on top

Preheat oven to 375 F.

1. In a pot on medium heat, cook the onions in a drizzle of oil until translucent.
2. Add onions and potatoes to a greased baking pan and stir to combine.
3. Place the pot back on the stove and add the vegan butter. Heat on medium heat until melted. Sprinkle the flour overtop, then whisk to combine. let it cook for about 30 seconds to get rid of the raw flour taste.
4. Slowly add splashed of nondairy milk, whisking until smooth each time to create a thick sauce. Repeat with the broth.
5. Add the salt, nutritional yeast and pepper and whisk to combine. Then pour over the potatoes, using a spoon to smooth out the top and allow the sauce to get through the cracks to the bottom. Sprinkle with paprika (if using).
6. Bake for 45 minutes. Then, add the cheese and bake another 15 minutes until melted and bubbling.
7. Let cool for 10-15 minutes before serving.

I just made this last night, it was delicious, I loved how creamy the sauce was I didn’t use any vegan cheese just because I don’t like any. It however didn’t need any vegan cheese I ripple milk and it came out super creamy and delicious. I’m gonna try this sauce on macaroni to see it it also makes a nice Mac and “cheese”

I did one this past covid Christmas and mine turned out terrible. I did a recipe with cashews and the thickener was tapioca flour. It didn't look like scalloped potatoes with that golden yellow cheesy color. Mine looked kind of grayish yellow. Yuck my family was so polite but it didn't get eaten. I'm going to try your recipe and use Miakos chedder shreds, real flour and vegan butter!

The recipe is very cool, however I struggled with the sauce, at the beginning it was too runny, so I added more flour, then it became too thick, I added more veggie broth, finally I found out that due to all of these adjustments, the sauce had multiple flour lumps…

The scalloped potato sauce is so delicous and creamy! I use it for my mac and cheese sauce too! Just add the cheese to the sauce and BAM magic cheese sauce! This saice is honestly magic Liv is a genius!

I made this without making the sauce (I did the traditional easy method) and used vioLife cheddar and it was DELICIOUS!! 😍😍😍 Violife is by far the BEST vegan cheese 🧀 👌🏻🔥

Ps. For those who want to avoid cashews, I find that soy milk is the best dairy-free milk for scalloped potatoes. 🥛

Honest opinion*
Personally, I would not make this for a party I think it tastes too “vegan.” The potatoes are really runny. Go heavy on the salt and vegan cheese. I would rate this recipe an 8/10 I think it’s really easy and good for family dinner time.

What if you aren’t a huge fan of whole onions? I love the flavor, just not the crunch of onions. I’m working on my relationship with onion 😂 but still struggle to get over the fact that it’s onions. Any substitutions?

What is your preferred plant milk? I've tried making the bechamel with unsweetened almond milk, but it didn't taste right. I then tried it with rice milk, which was ok, but I thought I could make it better. I'm just not sure which plant milk I should try next. My Mom makes hers with milk and cream. I want to perfect a version that I think she'll be able to love that leaves out the animal products.

I made it!!! Definitely good!! I added cheese throughout, spinach, and some vegan crumbles. It's a potato casserole haha. Also I had almond flour, still came out good.

This sauce is AMAZING!!!

I recommend mixing everything in a bowl vs mixing in the pan. I was losing potatoes. I'm a clutz. Enjoyyyy
