These Vegan Pancakes are so light and fluffy, you would never know they were plant based. You can easily make them gluten-free as will by swapping in your favorite gluten-free baking mix.

VEGAN PUMPKIN PANCAKES:

VEGAN PANCAKE RECIPES
1 cup white whole wheat flour (sub 1/4 cup oat flour – super thin pancake – good flavor)
1 tablespoon baking powder
pinch salt
1 cup unsweetened almond milk
1 tablespoon maple syrup
1 tablespoon coconut oil

In a large bowl combine flour, baking powder and salt, mix together.

Add in the almond milk, maple syrup, coconut oil and stir until well combined. Allow the mixture to sit for 5 minutes so the baking soda has the to active. You will notice that the batter because light and fluffy, that’s how you know it’s time to make the pancakes.

Heat a large non-stick skillet over a medium-low heat and coat the pan with some coconut oil.

Scoop up 1/4 cup of batter and drop them into the pan forming small-medium sized pancakes. Allow to cook until you see small bubbles forming on the top of the pancake, gently flip and cook for another two minutes or until the pancakes are golden brown and cooked through.

Remove from pan and repeat until you have finished all the batter. Serve with your favorite pancake toppings and enjoy!

Makes 8-10 small pancakes. Serves 2.

Yumm yumm you nailed it. ❤️ I should probably mention that Spelt has gluten in it and it’s not safe as a gluten free substitute for celiac or gluten free diets. I wonder how Buckwheat would sub out, since that grain is actually free of gluten. 😋

@xex421 it really depends, for people who react to traces of gluten leftin cookingware spelt is still a total catastrophe.
I’m not really allergic but even I still can not handle spelt or slow risen rye…
My best bet for glutenfree baking is teff flour followed by buckweat

If I’m correct the gluten in spelt has a different structure than regular gluten in wheat, and does not affect the same way. It is worth having spelt not processed in a location with other grains and legumes. It is worth the research.

Clean & Delicious Np 😀 — that said, some people that are gluten intolerant can in fact tolerate Spelt and Kamut. My daughter does ok with Kamut but not Spelt, so I learnt the hard way…😄.

And don’t know where this bullshit rumor started, I learned about it for YEARS. Fun fact is, the first time I heard about it being gluten free was in a correction context saying that spelt does in fact contain gluten.

I did do a bit of tweaking though: I added some ground cinnamon, splash of vanilla extract, and replaced the maple syrup with Erythritol. Eating these pancakes now with some freshly sliced bananas and YUM!
