Here is what you’ll need!

One-Pan Chicken And Veggie Meal Prep 2 Ways
Servings: 4

INGREDIENTS
1 red pepper, sliced
1 yellow pepper, sliced
1 small red onion, sliced
2 boneless, skinless chicken breasts
3 carrots, sliced on the bias
1 cup broccoli florets
1 cup snow peas
1 can black beans, drained and rinsed
4 cups cooked brown rice

Chipotle Lime Sauce
½ cup olive oil
½ cup lime juice
½ cup honey
1 tablespoon chopped garlic
1 teaspoon chipotle powder
1 teaspoon cumin
Salt, to taste
Pepper, to taste

Teriyaki Sauce
1 cup soy sauce
½ cup honey
1 tablespoon fresh ginger, minced
1 tablespoon fresh garlic, minced
1 tablespoon sesame oil

PREPARATION
Preheat oven to 425˚F/220˚C.
Spray a parchment paper-lined baking sheet with cooking spray. Place the red pepper, yellow pepper, and red onion on the left half of the sheet and the carrots, broccoli, and snow peas on the right half. Set aside.

Realize that everything on the internet is fake… Even recipe videos. Not only can you not put all these things onto one pan and expect great results… But there's no way you could pile things on top of each other like that. The carrots, the broccoli… It just won't cook right. I came expecting a great recipe and this video is b*******. Even if you didn't stack the broccoli and carrots on top of each other that way… You could never crowd a pan that much and expect it to cook properly. Chicken is thicker than vegetables. Broccoli is thicker than peppers… Etc etc. I promise you it's not going to come out the way you think

Make more of that marinate and marinate that chicken overnight. Bake the vegetables seperated. You can just pan sear the chicken, take out chick then add some of that marinate in the pan thickens it with starch or flour slightly. Serve the sauce on he side or pour it over the dish. Yu will have a much better dish for family dinner.

Tip: always cover your chicken when you bake it, it prevents the chicken from drying out and keeps it juicy😁😁😁
