SUPER EASY COMFORT FOOD: MY POTATO, CHEESE, AND VEGETABLE PIE!

INGREDIENTS:
4 large potatoes, cooked
2 tablespoons of flaxseed in 6 tablespoons of water
1/4 (could be more) of all-purpose flour or rice flour
vegan cheese
Black pepper
salt
1 1/2 teaspoon of baking powder

1 finely chopped carrot
1 clove of garlic, minced
1/2 onion, finely chopped
1 cup finely chopped green beans
1/2 cup red, yellow or green pepper
1/3 cup of corn
pepper to taste
salt to taste
fresh parsley

METHOD:
Stir fry the onions for 5 minutes, add the garlic, stir fry for 1 minute, add the remainder of the vegetables, stir fry for 3 minutes more, turn off the heat and set it aside.
In a bowl, mash the potatoes, add the flour, salt, and pepper, the flax egg, the baking powder, and the water, mix to combine, add the cooked vegetables, mix to incorporate, add the vegan cheese, put it to a baking dish, put it in the oven at 185C (350F) for 45 to 50 minutes, remove from the oven, sprinkle some fresh parsley on top and serve it!

SUPER EASY COMFORT FOOD: MY POTATO, CHEESE, AND VEGETABLE PIE! RECIPE BY CHEF JANA PINHEIRO

THAT SIMPLE 3 INGREDIENTS NUTRITIONAL YEAST SUBSTITUTE RECIPE YOU WILL LOVE!

INGREDIENTS:

1 cup of cooked chickpeas, washed and rinsed
4 packages of active dry yeast (approx 2 tablespoons)
2 or 3 cubes of fermented soybean OR 2 tablespoons of white miso paste

METHOD:

In a dr skillet, on medium heat, add the active dry yeast, stir it constantly for about 5 minutes or until light golden in color. Reserve.
Preheat the oven to 90℃ (194℉)
Add the chickpeas t and the fermented soybeans to a baking sheet lined with parchment paper, smash it a fork, making sure it's evenly distributed all over the baking sheet. Put it in the oven at 90℃ for 3h and 30 minutes or until everything is completely dry, but not toasted.
Remove from the oven, let it cool down completely, then add the chickpeas and fermented bean curd to a blender, blend until it becomes a fine powder.
Add the toasted active dry yeast to the blender, shake it to incorporate everything together.
Lasts for up to 3 weeks in the fridge.
