5 EASY SLOW COOKER MEALS | VEGETARIAN SLOW COOKER RECIPES | FAMILY MEALS | FALL AND WINTER RECIPES

We’ve been really enjoying our meals from the slow cooker lately. It makes my life as the family cook so much easier. All of these simple recipes are my own and they can all be frozen in a sealed container for up to three months.

Lentil Bolognese ( https://youtu.be/UeEVdP7rK_A?t=181 )

250g Red Split Lentils, rinsed
1 Red onion, finely chopped
1 stick of celery, finely chopped
1 large carrot, finely chopped
2 garlic cloves, finely chopped
150g white mushrooms, diced
300ml passata
250ml veg stock
1 tsp dried oregano
1 tbsp marmite
2 tsp light soy sauce
1 tbsp worcestershire sauce
Salt & Pepper to season

Prepare your vegetables and pop everything into the slow cooker for 8 hrs on low or 4 hours on high. Serve with spaghetti, as a pasta bake or in a lasagne.

Lentil Cottage Pie Filling ( https://youtu.be/UeEVdP7rK_A?t=563 )

250g Green Lentils, rinsed
1 onion, finely chopped
1 cloves garlic, finely chopped
1 large carrot, finely chopped
2 medium potatoes, peeled and cubed
100g frozen peas
60g frozen spinach
750ml onion gravy made with granules
1 tsp veg bouillon or half a veg stock cube
2 tsp dried sage
pinch of ground cumin
Salt & Pepper to season

Prepare your vegetables and add everything to the slow cooker. Stir well and cook on low for 6 – 8 hours or high for 2 hrs, then low for 2 hours.Boil some potatoes and mash. Add to the top of your filling once it’s cooked and top with 50g grated cheddar. Pop into a preheated oven at 200C/400F/Gas Mark 6 for 30 mins until the cheese is bubbling. Check your slow cooker pop in oven proof first! Or transfer to a casserole dish and pop under a medium grill for 5 minutes.

I also use this filling for puff pastry pies and hot pot.

Veg & Black Bean Chilli ( https://youtu.be/UeEVdP7rK_A?t=1158 )

1 red onion, finely chopped
3 cloves of garlic, finely chopped
1 carrot, finely chopped
2 bell peppers, diced
1 large tomato, diced
1 chilli (optional), finely chopped
60g frozen spinach
80g white mushrooms, finely chopped
2 tins of black beans
400ml passata

2 tbsp tomato puree
1/2 tsp ground cinnamon
1 tsp ground coriander
1 tsp onion powder
1 tsp chilli powder
1/2 tsp cayenne powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1 heaped tbsp marmite
2 tsp tamari or soy sauce
1 vegtable stock cube or stock pot
3 tbsp strong filter coffee

Add all of the ingredients to your slow cooker, stir well to combine and cook for 6 hours on low. Serve with fluffy rice, on jacket potatoes, potato wedges or use for black bean tacos.

Chilli Mac ( https://youtu.be/UeEVdP7rK_A?t=1810 )

1 tin of pinto beans, drained
1 tin of sweetcorn, drained
1 tin of chopped tomatoes
1 red onion, finely chopped
4 garlic cloves, finely chopped
2 bell pepper, chopped small
100g soft cheese
2 tbsp jalapenoes, finely chopped
150g mature cheddar, grated
250 ml veg stock
1 tbsp tomato puree
1 tsp ground cumin
1 tsp ground cinnamon
1 tsp cayenne pepper or chilli powder
1 tbsp balsamic vinegar
300g elbow macaroni

Add all ingredients except the pasta to the slow cooker, stir well and cook on low for 6 hours or high for 3 hours. Add the macaroni and cook for high for 30 mins. Remove from the slow cooker immediately to avoid the pasta becoming mushy. Serve with some extra grated cheese and chopped spring onions.

Easy Veg Curry ( https://youtu.be/UeEVdP7rK_A?t=2436 )

1/2 a head of cauliflower, cut into florets
1 onion, finely chopped
1 large or two small carrots, chopped
1 green pepper, chopped
4 salad potatoes, cubed with skin on
100g white mushroom, quartered
1 tin coconut milk
1 1bsp minced garlic or garlic puree
1 tsp ginger puree
1/2 tsp ground cumin
1/2 tsp garam masala
1 tsp turmeric
1 tbsp curry powder ( I use madras curry powder)
Salt & Pepper to season

Add the onions, garlic, ginger and spices to the slow cooker and stir well. Add the remaining ingredients, stir and cook for 8 hour on low or 4 hours on high.

To thicken the sauce, stir in 2 tsp of cornflour mixed with a tbsp of water to thicken 30 minutes before serving. Serve with fluffy basmati rice or a warm naan bread.

Worcestershire sauce is made with anchovies. Not a problem for us as we are meat-eaters who want to cut-down but it is not vegetarian.

I add brown sugar to anything with tomato juice or paste takes the acid out tomatoe products really bother me but I love it 😂
