MOB Veggie is coming July 4th, to get you all in the mood, here is an early recipe!

INGREDIENTS:
4 Red Bell Peppers
Garlic
1 Lemon
Flaked Almonds
Sherry Vinegar
Tomato Puree
500g Dried Pappardelle
Kalamata Olives
Fresh Basil
Olive Oil
Salt & Pepper

RECIPE:
Preheat your oven to 160C fan (180C/360F/Gas Mark 4)
Add the red peppers and 3 garlic cloves (skin on) to a roasting tray with a lemon cut in half. Roast for 45 Minutes.
Once the peppers are soft, add them to a blender. Squeeze in the roasted garlic and roast lemon juice. Add 2 tablespoons of flaked almonds, 2 tablespoons of sherry vinegar, a tablespoon of olive oil.
Blitz until smooth.
Get the pasta on.
Once the pasta is al dente, drain (save some pasta water in a cup). Add back to the pan with your Romesco sauce, a large handful of chopped Kalamata olives and a handful or torn basil and mix!
Serve and Enjoy!

The lemon is very bitter. I'm glad I heeded the warnings in the comments. Use no more than half, but if I do this again I'd use 1/4. I like it though.

Did you peel the garlic before putting it in the blender? Do you put the whole lemon or just the juice in the blender?

I just made this with half the lemon and it was very vinegary. I'd recommend only 1tbsp of vinegar and only 1/2 a lemon. Was still nice though

Just tried making it there, I'd recommend just doing half a lemon. As the sauce had a sour after taste, or you could add cream/creme fraíche👍🏻
