Haven’t had okra in a very long time. But I’m trying to grow a few plants this year just to see how it goes. This recipe looks delish. People say Okra is slimy, but when we cooked it back in the day, we cooked it to a crisp. Made a nice crunchy snack.

@We Love Food – I’m a “refrigerator cook” meaning i pull out whatever is in the fridge and cook it and hope. But as for the okra, i cut into 1/2″ – 3/4″ sections, roll them around in a pan with enough oil to coat them well. Salt, pepper or whatever spice you like – fry until just before they get pretty blackened. Take ’em out, put them on paper towels to degrease. i like to sprinkle a little “Frank’s Louisiana Hot Sauce because it’s not too hot and for me the vinegar brings out flavor. As they say in Deutchland, “Gut essen!’

I love this recipe. I do it differently, put the whole pods in an already steaming steamer, until just bright green, only about 3-4 minutes. The. Add a cube of butter, salt and pepper and lemon juice, and serve. The pods are al dente and delicious.

@We Love Food I just added a can of coconut milk instead of water to the rice of your choice, seasoned however you like. I made about 2 cups of rice. If you are making more you can choose to add water as well or more coconut milk for a more concentrated coconut flavor.
