Black Bean Veggie Burgers Recipe (serves 4)

In a mixing bowl, add and toss
1/4 cup olive oil
2 sliced sweet potatoes
1 tsp garlic powder
2 tsp chili powder
1 tsp kosher salt

Place on a pan lined with aluminum foil, skin-side down, bake at 375º F for 20-25 minutes until crispy.

in a pan saute

1-2 tbsp olive oil
1/2 finely chopped onion, saute 1 min, then add
1/2 cup grated carrots
1/4 cup grated zucchini
2 cloves minced garlic
pinch of salt

saute together, set aside.

In a large mixing bowl add 1 can of black beans (non rinsed), mash until a paste forms, add 1 more can of beans, mash lightly to preserve texture and color.

Add the cooked vegetable
2 tsp chili powder
1 tsp cumin
1 egg
1/2 cup oat flower
1 tbsp chopped cilantro
1 tsp kosher salt
mix until the batter forms. Mold into patties, fry in a hot cast iron pan, 5 minutes each side.
Serve on favorite bun with condiments.

MOCHI MATCHA CAKE:

In a large bowl add
1/2 cup melted coconut oil
1 1/2 cups sugar
mix with a hand mixer until fluffy
add 4 eggs (room temp)
mix again until just blended
Add 1 can full fat coconut milk
1 can evaporated milk
1 tsp vanilla
1/8 tsp salt
1 box mochiko flour (sweet rice or glutinous rice flour)
2 1/2 tsp baking powder
mix again into a smooth batter.
Divide between two 9-inch round pans (lined with parchment paper)
Bake at 350ºF for 35-40 minutes until golden brown.
Let cool completely before removing from the pans.

Matcha Glaze:
2 cups powdered sugar
2 tbsp matcha powder
pinch of salt
Mix then add
2-3 tbsp milk. Mix again, coat the cakes. Top with fresh raspberries

Steel bowl so u can bang your masher on side of bowl to clear it. Add your spices to the sauté to develop flavor way better especially cumin and chili powder. Did you dry your beans at all before mashing?

using an egg does not allow it to make it "vegan " due to egg is a by-product of animal. I use bread crumbs instead of egg ..
