Baked Vegetable Patties (Grain-Free & Dairy-Free)
INGREDIENTS:
2 Medium Zucchini (300 g) – Grated
1 Medium Carrot (200 g) – Grated
1 Medium Potato (150 g) – Grated
1 Small Onion (100 g) – Finely Chopped
1/2 Cup Parsley OR Cilantro Leaves – Finely Chopped
1/2 Teaspoon Salt
1/2 Cup Almond Flour/meal (50g) OR Roasted Ground Walnuts
1/4 Cup of Nutritional Yeast OR Cheese of choice
2 Tablespoon Ground Chia seeds OR Flax Seeds OR 1 Egg
1/2 Teaspoon Cumin Powder
1/2 Teaspoon Garlic Powder OR Fresh Garlic (OPTIONAL)
1/2 Teaspoon Cayenne Pepper (OPTIONAL)
Salt to Taste
1/4 Cup of Extra Virgin Olive Oil (Organic Cold-Pressed) OR Oil of Choice

Made these without oil. They are wonderful. Best vegetable Pattie I’ve tried.
Did you change the recipe other tha the oil?
@Sherie Cooper no, the only thing the oil adds is a crispiness to the outside. it’s not really needed. also the ‘dough’ slides out of the cup scooper fine without oil.

I made this using chickpea flour (didn’t have almond flour and wanted to make them) – they are yummy!
lilmisspeace I also use gluten free Sorghum flour as well as almond and coconut flour depending on what I am making. There is also rice flour.
Thank you I was going to ask just that question. Chickpea is used a lot in Indian cooking such as to make onion bhajis 🙂
It is said chickpea flour is best when mixed eith water & allowed to stand covered for two hours or overnight. Then stirred & began the recipes.

Well I grated all the veggies before I realized I was out of Almond flour, so I used Garbanzo bean flour. And I live in an RV and it was too hot to turn the oven on so I cooked them on my cast iron frying pan. And they were Amazing! Great recipe. I will make these again. Thank you!

Just made these and they were amazing! I didn’t add in any of the spices except salt and pepper and it was perfect. The more flour you add the more chewy or they are like a hash brown. Also we used our cast iron skillet to make them and they came out perfect
