6 EASY WEEKNIGHT DINNERS | SIMPLE AND CHEAP VEGETARIAN MIDWEEK MEALS

Hey guys!

I hope you are all doing well. Welcome back to my channel and to another instalment in my midweek meals series. These videos always go down so well, so I am so excited to bring them back. This video contains 6 midweek meals that are super easy, cheap and tasty with plenty left over for the next day.

MEALS IN THIS VIDEO:
MONDAY: Three vegetable chilli pasta bake
– 1 white onion
– 3 courgettes
– 1 leek
– 3 garlic cloves
– 200g brocoli
– 1tsp chilli flakes
– 200g passata
– 1 can of chopped tomatoes
– 400g fusilli pasta
– 80g mozzorella
– 80g cheddar
– 50g panco breadcrumbs

TUESDAY: 15 minute soft shell tacos
– Quorn mince
– 1 white onion
– 1 red bell pepper
– 1 yellow bell pepper
– soft shell tortillas
– taco seasoning (1tsp cumin, smoked paprika & chilli powder)
– iceberg lettuce
– 50g cheddar
– coleslaw

WEDNESDAY: Fridge salad
– finely grated zest and juice 2 lemons
– 3 tbsp extra virgin olive oil
– 1 tbsp clear honey
– 2 tbsp tahini
– 250g pouch of cooked grains (I used a mixture of bulgur, quinoa & lentils)
– 400g chickpea, drained
– 1 pomegranate, seeds removed
– 200g cherry tomatoes (a mix of red and yellow looks attractive), halved
large bunch mint or parsley (or a mixture), leaves picked and roughly chopped
– 50g toasted flaked almonds
– bunch spring onions
– 200g pack feta

THURSDAY: Creamy leek and mushroom pie
– 300g chestnut mushrooms
– 3 leeks
– 1 pack of puff pastry
– 200ml cream
– 1tbsp wholegrain mustard
– 100ml dry white wine
– 50g frozen peas

FRIDAY: Spaghetti and meatballs
– 9 vegetarian meatballs
– 200g spaghetti
– 1 white onion
– 3 cloves of garlic
– 1tsp thyme
– 1 tsp oregano
– 300g passata
– 1 can of chopped tomatoes
– 100ml red wine
– vegetarian hard cheese to serve

SATURDAY: Allotment pie
– 5 large baking potatoes
– 1 bag of Quorn mince
– 1 white onion
– 2 leeks
– 100g frozen peas
– 500ml vegetable stock
– 100g gravy granuels
– 1 bunch of rosemary tips
– 100g carrots
– 50g butter
– 100ml milk

I hope you are all doing well. Welcome back to my channel and to another Aldi haul with six super tasty, mid week meals. I really love filming these videos! This week myself and Zara set ourself a challenge to see if we could cook six mid week meals with left overs for lunch for £20 each!

So pleased l found your channel. I am also a virgo and vegetarian. I thought l heard you mention that you were a Virgo. Anyways l noticed you cook alot of sulfuric foods. I truly love them but the smell lingers so intensely. Do you have any tricks besides lighting loads of candles to help alleviate the scent of broccoli etc ? Top tip with washing the leeks Luke; top & tail the leeks, & slice all the way down the middle from the top the bottom, that way when you’re running them under a cold tap to wash it’ll rinse out any mud / sand on the inside of the leek which is where you need to be most careful of with leeks 🙂 it also makes slicing / cooking easier as they’ll be in slightly smaller pieces! I grew up on a farm & I was around lots of vegetable & fruit growing lol! It’s ingrained in my brain!!
Do you rate the Linda McCartney ‘meat’balls over the Quorn ones? I’m not full veggie but have used Quorn mince for years over beef, used to really enjoy Quorn meatballs but haven’t bought any in years. I saw the Linda McCartney ones on sale a few months ago but wasn’t sure if to pick them up or not! I love her mozzarella burgers if you haven’t tried them, yum! Delicious meals as always, thanks for sharing!! Xx
