Hi Guys!! Here are 3 Easy & Healthy vegan meal ideas for toddlers and even adults. I hope you guys enjoy. Much LoVe.

Smoothie Recipe:

2 kale’s leaves
1/2 cup of freshly squeezed orange juice
1 banana
5 tablespoon frozen wild blueberries
1/3 medium size sweet potato (cooked)
1 tablespoon soaked chiaseeds
1 teaspoon barley grass juice powder
1/2 teaspoon spirulina powder
2 teaspoon Almond butter (optional)

Place all the ingredients in a blender and blend until smooth!

Kale may have more iron per calorie than beef but I have two things to add to that… It is way easier to get more calories from beef (therefore more iron) than from kale. Additionally, beef has heme and (depending on the way the beef was raised) non-heme iron and kale only has non-heme iron. Heme iron is ONLY in meat, fish, poultry. Non-heme iron is the only iron in plants.

Heme iron is much more readily absorbed by the human body than non-heme iron. So you have to consume more non-heme iron than heme iron to get the same amount of iron absorbed in your body! Additionally, there are other vits/minerals etc that can either encourage or inhibit the absorption of non-heme iron. Phytates and tannins are big inhibitors of the absorption of non-heme iron. Foods that contain phytates are things like grains, nuts, seeds, etc. So, adding almond butter to the smoothie with the kale is actually inhibiting absorption of the iron in the kale that is already harder for your body to absorb. I will say though that consumption of vitamin C encourages absorption of non-heme iron, so maybe in some ways, the orange juice and kale negate each other.

Nutrition is NOT so cut and dry, people. And I am plant-based and it is not like I am in the pocket of either industry. But this is the misinformation that can be so frustrating and frankly, damaging. So… No, kale is not the new beef….
Btw, Fabiola I love your channel and your family. This is nothing at all against you, but these are the facts. This is why there are whole degrees dedicated to nutrition, whole professions dedicated to nutrition. There is SO much more to it than meets the eye.
