4 Minute Vegetable Stew in the Instant Pot is delicious! Make up a pan of cornbread while you’re in the kitchen. It goes perfectly with this stew.

What you need to make 4 Minute Vegetable Stew:

1 bell pepper, chopped
1 medium sweet onion, chopped
2 cups canned diced tomatoes, semi-drained
1 cup frozen corn
1 1/2 vegetable broth
1 tablespoon chili powder
1 1/2 teaspoon ground cumin
1 1/2 teaspoon green curry paste or 1 fresh jalapeno
4 cups cooked canary or pinto beans
1 cup fresh cilantro, chopped

Pressure cooking time 4 minutes with a 10 minute natural pressure release.

I water saute to get a little brown on bottom by adding a wee bit of water at a time and as it dissapates …. stir and add more water till you get the beautiful flavor you want…and believe me it does add flavor the flavor is in the brown bits that you create by doing this….

You have a lot of interesting recipes on your youtube channel that makes it worth coming here. But although I have an electric pressure cooker, just not an ip, and I think these things do a lot of things very well I sometimes use other methods because I think they work better. I still boil rice in a pan on the stove. I tried the pc and see no advantage. I still steam boiled eggs in a pan with a little water as this works well and I see no advantage to a pc. But there are a lot of other things that they do very well. I have the electric pc and a stove top pc and I use them both and I like them both.

Hi. It's 4 minutes, because you cooked the beans yesterday! I thought that the point of the speed of a pressure-cooker is that I don't have to cook the beans beforehand! How long does it take if you put in the beans raw?
