This has become my favourite go-to Covid lockdown recipe. I add chilli oil (or chilli's), some fresh mushies, a bit of tomato paste. And have found that boiling up dried lentils is a real treat – if you could be bothered. Yum.
Feel like I should comment that I’ve literally made this about 100 times now and it never fails to impress people who think veggie/vegan food is bland or ‘needs meat’. Great versatile recipe!
