The recipes here are pretty intentionally vegan. Indians use ghee which is dairy in everything. Accidentally vegetarian, yes.

@Annushka Mehta I love Indian food too, but pretty much everything has dairy in it. I wish there was more you could get at restaurants that are vegan. I tend to just veganize everything myself at home.

Its not accidental. Indian food is deeply intertwined with Indian school of teaching
Hinduism, Jainism, Buddism, Sikhism and several other branches of these teachings.
For people who are aiming at higher knowledge, Enlightenment etc should pursue Satvic diet.
The food is classified as:
Satvic Food (which omit all non veg, Onion and Garlic)
Rajasic Food ( include onion garlic and Extreme spice quantities but exclude non veg food)
Tamasic Food (includes non veg)
Also it prescribes time for eating food and it should be in sync with the sun, it is said our digestive fire is in sync with sun and around 12 pm our digestive fire will be at maximum
So
Breakfast : around 7am (quantity should be medium
Lunch : around 11am (if someone has any cravings this is the time to let loose, only time to fill your stomach if you need to)
Dinner : before 6pm (eat less)
It also suggest to eat food which is grown in your locality of 3 to 10km somehing like that, also food should be taken within 4 hr after cooking. There is also food which shouldnโ€™t be taken together with other food and combinations etc.
This is the basic way of Indian cultural food system, there is way more if you dive in to Ayurveda and Yoga.

Indian recipes depend immensely on ghee, paneer, and yoghurt gravy. And then you wash it down with lassi. If anything is โ€œaccidentally veganโ€, itโ€™s the Macrobiotic version of pre-industrial Japanese foodโ€”minus all the fish products. Japanese people never developed dairy tolerance.

Awesome! I havenโ€™t seen somebody mention boiling tofu since a recipe I had probably about 20 years ago when I made a vegan lasagna that required me to boiled and mashed tofu and then wring it out in a towel. Itโ€™s amazing how firm it got as a baked!

I tried to make a paneer substitute out of tofu before. I boiled the tofu in a mixture of almond milk and soy cream. It was great! It gave it that delicious creamy, milky flavour.

@Viking Lord because you canโ€™t add aloo in place of paneer and still call it palak paneer. Aloo palak and palak paneer are 2 different dishes in any Indian restaurantโ€™s menu. Go check it out.

I made this recipe Friday night for Saturday, and it was wonderful! So flavorful, I used frozen spinach that I let defrost and used the boiled tofu method that I added to the sauce a few minutes before serving. I skipped on the coconut milk because we liked the flavor as it was, and surprisingly it was pretty creamy even without it. I didnโ€™t have any fresh cilantro but am sure that would have made it even tastier. Last week after trying her red lentil curry I thought it would be hard to find a recipe that topped that, and although very different in flavor, this recipe might be even better in my opinion. I hope to try adding mint to this recipe sometime to hopefully mimic one of our local Indian restaurants take. Excellent recipe๐Ÿ…!!!
