Ingredients for Vegetable Balls:
            Green pepper/ Capsicum (Hari shimla mirch) – 1/2 cup (Finely chopped)
            Carrots (Gajar) – 1/2 cup (Finely chopped)
            Cabbage (Bandh Gobhi) – 1 cup (Finely chopped)
            Red onion (Laal pyaz) – 1/4 cup (Chopped)
            Green chili (Hari mirch) – 2 small ( Finely chopped)
            Garlic (Lehsan) – 1 tsp (Chopped)
            Green onion green part (Hari pyaz ka hara hissa) – 1/4 cup (Chopped)
            Red chilli powder (Laal mirch) – 1 tsp
            Black pepper (Kali mirch) – 1 tsp
            Salt (Namak) – 1 tsp (To taste)
            Corn flour – 2 tbsp
            All-purpose flour (Maida) – 2 tbsp
Ingredients for Veg Manchurian Curry:
            Oil (Tel) – 1/4 cup
            Garlic (Lehsan) – 1 tbsp (Crushed)
            Green chili (Hari mirch) – 2 small (Chopped)
            Green onion white part (Hari pyaz sufaid hissa) – 1/4 cup (Chopped)
            Red chilli powder (Laal mirch) – 1 tsp
            Black pepper (Kali mirch) – 1 tsp
            Salt (Namak) – 1 tsp (To taste)
            Honey garlic sauce (Optional) – 2 tbsp
            Soy sauce – 2 tbsp
            Ketchup – 1/4 cup
            Hot sauce (Siracha) – 2 tbsp
            Corn flour – 2 tbsp
            Water (Pani) – 1.5 cup and 1/2 cup
            Green onion green part (Hari pyaz ka hara hissa) – 1/4 cup (Chopped)
Directions – Prepare Mixed Vegetable Balls
            – In a bowl, place a malmal cloth/ kitchen towel/ cheesecloth
            – Add the following to the cloth:
            Green pepper/ Capsicum (Hari shimla mirch) – 1/2 cup (Finely chopped)
            Carrots (Gajar) – 1/2 cup (Finely chopped)
            Cabbage (Bandh Gobhi) – 1 cup (Finely chopped)
            – Bring corners of the cloth together and squeeze to remove excess water from the vegetables
            *Draining out excess water helps bind the mixed vegetables together. It also results in using less flour which makes it more tasty
            – Place the mixed vegetables in a bowl and add the following:
            Red onion (Laal pyaz) – 1/4 cup (Chopped)
            Green chili (Hari mirch) – 2 small (Chopped)
            Garlic (Lehsan) – 1 tsp (Chopped)
            Green onion green part (Hari pyaz ka hara hissa) – 1/4 cup (Chopped)
            Red chilli powder (Laal mirch) – 1 tsp
            Black pepper (Kali mirch) – 1 tsp
            Salt (Namak) – 1 tsp (To taste)
            Corn flour – 2 tbsp
            All-purpose flour (Maida) – 2 tbsp
            *Flour is added to bind the vegetable balls, amount may change depending on moisture of the veggies
            – Mix well
            – Take small portion and make small balls
            – Deep fry the balls on medium heat until light golden brown
            – Set aside
Directions to prepare the Manchurian Gravy:
            – In a pan, add and heat 1/4 cup of oil
            – Add 1 tbsp of crushed Garlic (Lehsan) and saute for 1 min
            – Add Green chili (Hari mirch) – 2 small (Chopped)
            – Add Green onion white part (Hari pyaz sufaid hissa) – 1/4 cup (Chopped)
            – Saute for 1 min
            – Add the following spices and sauces:
            Red chilli powder (Laal mirch) – 1 tsp
            Black pepper (Kali mirch) – 1 tsp
            Salt (Namak) – 1 tsp (To taste)
            Honey garlic sauce (Optional) – 2 tbsp
            Soy sauce – 2 tbsp
            Ketchup – 1/4 cup
            Hot sauce (Siracha) – 2 tbsp
            – Mix well and cook for 2 mins
            – Add 1.5 cup of Water (Pani) and bring to boil
            – In a small bowl add 2 tbsp of Corn flour in 1/2 cup water and mix to make a slurry
            – Add the slurry to the pot while stirring and cook until desired consistency
            * you can adjust the quantity of cornflour depending how thick or thin you want the gravy
            – Add the pre-fried vegetable balls
            -Add Green onion green part (Hari pyaz ka hara hissa) – 1/4 cup (Chopped)
            – Mix well and turn off heat
            – Veg Manchurian is ready
            – Serve with boiled rice, fried rice or noodles and garnish with green onion.
