Easy & Healthy Vegetable Soup Recipe SERVES 4-6:
In a heavy-Bottomed pot on medium heat, add
1 tbsp Ghee, let it melt
1/2 chopped onion, saute for 1-2 minutes
2 carrots chopped
1 chopped celery

mix together, sweat, add
2 tsp Italian Seasoning
1 clove minced garlic
1 tsp Kosher salt

saute for another 2 minutes

add

1 cup chopped zucchini
1 cup chopped green beans
1 cup broccoli

cook another 2 minutes, add

1/2 cup diced tomatoes
5-6 cups vegetable broth
1 rind parmesan cheese
1 sprig fresh rosemary

stir, cover, and cook on medium heat for 25 minutes

fish out the rosemary and parmesan rind. On a low simmer, add 1 can cannellini beans and 1/2 small shredded savoy cabbage

Stir, cook 5 more minutes and serve with a garnish of parsley. SERVES 4-6

MOCHI MATCHA CAKE:

In a large bowl add
1/2 cup melted coconut oil
1 1/2 cups sugar
mix with a hand mixer until fluffy
add 4 eggs (room temp)
mix again until just blended
Add 1 can full fat coconut milk
1 can evaporated milk
1 tsp vanilla
1/8 tsp salt
1 box mochiko flour (sweet rice or glutinous rice flour)
2 1/2 tsp baking powder
mix again into a smooth batter.
Divide between two 9-inch round pans (lined with parchment paper)
Bake at 350ºF for 35-40 minutes until golden brown.
Let cool completely before removing from the pans.

Matcha Glaze:
2 cups powdered sugar
2 tbsp matcha powder
pinch of salt
Mix then add
2-3 tbsp milk. Mix again, coat the cakes. Top with fresh raspberries

I don't understand how people make soup and then pull out vegetable broth or some animal broth from somewhere. Does no one know how to make soup from scratch without that???? Like every soup tutorial I've watched has bought broth. I don't wanna buy processed or packaged broth. I don't get it.
