Another Early recipe to treat you all! Enjoy!
Ingredients
1 Pumpkin
1 Sweet Potato
Garlic
2 Red Onions
500-g (1lb 2-0z) packet of dried spaghetti
3 Leeks
Olive Oil
Method:
Preheat your oven to 200°C fan
Cut your Pumpkin up, de-seed it and put it on a roasting tray with some Olive Oil, Salt and Pepper.
Wash and cut the Sweet Potato, 2 Garlic Cloves and the Onions, then place in a separate roasting tray with Olive Oil, Salt and Pepper.
Roast for around 30 minutes, making sure to take out the Garlic as soon as it looks caramelized because it tends to burn.
Meanwhile, boil the pasta according to the packet instructions.
Wash and cut the Leeks, then pan-fry with Olive Oil and a generous amount of salt.
Back to the roasted vegetables. Place all of it into a blender and blend until smooth. Combine the pasta and blended sauce in a pan, making sure the sauce covers all the pasta. Serve with a glug of Olive Oil and a spoonful of Leeks.

I thought the puree would be too bland but it is SO GOOD. I almost want to eat it just as it is.
The camera man is quite bad at capturing the video.. because it either zoom into the food picture too closely or not at all… We want to see the person is talking and cooking.. + food (not too close up)..
