I am also a new vegan but was lacto vegetarian for 26 years. Never liked eggs nor milk, just had yogurt and cheese before going total vegan mode this year.
“Those times when you are just craving some tacos…” I think it would be easier to name times when I’m NOT craving some tacos!

The first recipe, the veggies looked frozen when u added them. How do they cook enough to eat??
It actually just cooks in the pot along with the couscous
usually frozen veggies are like half cooked anyway before they freeze it
I think they will cook down with the steam in the couscous, but im still skeptical about that recipe in particular. It doesnt seem flavorful 😶
Well, I left them for 2 minutes in the microwave.
I’m a terrible cook, so I hate to make a suggestion, but here goes…I always have a carton of veg broth in the fridge and I would use that over water in the savory recipes because it easily adds more flavor.
Good idea, i always though i don’t need broth, but when i started using it, i tasted the change and i loved it
Hope ur swearing daily that broth is full of salt so u might retain water in places u don’t want unless u workout everyday !
@Minerva Zuniga I see, you recommend a no-salt broth. I do homemade ones that way for sure. I refer to it as ‘onion water’ 🙂

I cannot lie to you the “nonfried rice” I ended up having for lunch. I absolutely love tofu! Anytime you post anything with tofu I end up having to make some!

Thanks so much for showing us these, they are all great! 🙂 Love the versatility along with the fact that you used some ingredients to crossover into other meals like the corn kernels, so if you wanted to turn this into a quick meal prep session it could all be done in under half an hour but you’d have 5 meals prepped then, excellent! 🙂
These are great! Love all your delicious fancy Korean dishes but sometimes you’re starving and only have a few minutes before you give in and order takeout. This is perfect.

Every time someone says “soft shell taco”, my Mexican brain goes “so, a tortilla”
Nah – “tortilla” is too generic, it might be large OR small and flour OR corn and soft OR hard. “Soft shell taco” is the proper term, otherwise she would have to say a “Small Soft Corn Tortilla.” 🧐🤓 Word “tortilla” alone does not convey what she recommends. Tortilla by itself implies made of flour and large burito size versus the smaller size CORN TACO sized tortilla

@Michele O’Sullivan in England we call green onions spring onions 😂 and agreed with couscous fried rice, it’s just couscous 😂
