Instant Pot Vegetarian Chili!!

Easy Vegetarian Chili from The Pot Heads fam! So easy a Pot Head can do it!

Ingredients:

1 cup edamame
2 carrots peeled and chopped
1 chopped onion
1 can of corn
1 can of kidney beans
1 can of garbanzo beans
1 can of diced tomatoes
1 cup chopped celery
3 garlic cloves minced
1/2 tablespoon tomato paste
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon pepper
2 cups vegetable broth
Shredded Cheese and Cornbread for topping.

Made pinto beans as the maiden cook for my Instant Pot. Followed by chili with those beans, I used the Slow-cook feature. 4 hours later had the best chili. My husband asked why I had gotten an Instant Pot if I was going to use it for slow cooking. Good question.
