Recipe Here!: http://pressureluckcooking.com/recipe/instant-pot-minestrone-soup/
Minestrone Soup is essentially the Italian spin on vegetable soup, but also adds in some pasta to the mix – making it, well, perfect.
So it shouldn’t come as a surprise that my take on this classic soup will ensure that it’s not only loaded with flavor and packed with oodles of veggies in every bite, but that it’ll also be a BREEZE to make while keeping it HEALTHY at the same time!
Due to the genius and one-pot-stop convenience of the Instant Pot, soups just don’t get easier or more top notch than this one, folks!

I made the chicken noodle soup it was really good. Now I have to try this soup.
Hubby and I thoroughly enjoyed this recipe. (I used homemade chicken broth/stock.)
Holy crap!!! This minestrone soup was the bomb. I’ve had my Instant Pot for over a year and haven’t used it till today. I even forgot the red beans and it still was amazing! I can’t wait to check out your channel for more tasty recipes!
What is the purpose of the soup button if no one is using it in their videos 🤔?

Hi Jeff. I made your minestrone soup and bananas foster today. Awesome…thanks for doing what you do…
I tried this recipe last night and it was so good!! I added extra jalapenos since I like my minestrone spicy and it hit the spot on this cold wintry weather! Thank you for sharing this recipe!!
I LOVE minestrone, and you made one great looking soup- hearty and I'm sure it was full of flavor!!! THANKS! I saw another recipe without any olive oil- SACRELIGIOUS!!!
OAN- you're funny. I also thought of that Oh-solo-mio song just before you opened your mouth!
It turned out … PERFECT 👌🏼
Greetings from Ireland! First of all I would like to say that I only have one month since I bought my Instant Pot. At the beginning I only made easy recipes like yoghurt, boiled potatoes, etc., just to get familiarised with the pot, since it was very intimidating to me. Then I started looking for recipes on youtube and I must say I was shocked about what a good team you and my pot could make! Your recipes are fabulous! I only did like 4-5 of them but there will be more to come. What sets you apart from other who have Instant Pot cooking channels, is how natural and talkative you are. I love it! It's such a pleasure to watch your videos. Ok.. now I would have a question. This recipe here is amazing! I've tried it last night but mine came out too thick. Let's say immediately after cooking it was almost liquidy, but not enough. But today, because of the pasta (wich absorbed the liquid), now it has an ever more thick consistency. I might aswell say I'm eating stew now. I must add that I used a small amount of tomato piure (clearly not 28 oz like you did) and the rest of the quantity was two chopped tomatoes cans, so I can make it up (beside the other ingredients wich I used exactly how you said). Could that be the problem? Or maybe I used too much pasta? I couldn't find any of the pasta you recomended so I used shells (not mini). Anyway I did something wrong, I'm sure, but I don't know what. I'm also always having trouble converting quantities in grams and mililitres so maybe that's a cause too. Is there a way I could make the soup more liquidy? I'm looking forward for an answer, from you or from the other users. Thank you so much for your awesome recipes!!!!
Gonna add some potatoes and onions to mine when I make this.
