As someone who used to get teased as a kid for bringing Indian food to school, and now as an adult gets requests from friends to make Indian food I’m so happy to see you teaching everyone how to make a simple dal. Let’s make everyone’s house smell like curry!

Just a couple of things, if one is not allergic to peanuts, using coldpressed peanut oil to sauté spices in actually gives a lot of additional flavor.

If you sauté a small amount of ural dal or some cashews, it will give a slight crunchy feel at times to the dal. A little bit of textural variety, I guess this is why Indian moms are always yelling at us to not forget the tadka!

I love the coconut milk idea, that’s brilliant!

Incidentally my grandmother did not eat onions or garlic for spiritual reasons. What I’ve been told is that if you add asafoetida (hing) that actually can substitute for that flavor.

You have inspired me try this in an instant pot (which has been sitting unused in my kitchen for at least a year) 😊

If you haven’t used ur Instant Pot.. I almost bought one, but on the box is says you may come in contact with known carcinogens. :-/ I knew the gadget seemed too good to be true.

I made something similar last night. It was a sweet potato and lentil curry…I have dried beans and lentils, so used dry lentils…I didn’t cook them for log enough 😹😹😹😹they should soften in the fridge overnight though, so maybe today (it’s 00:26am here right now) it’s be smoother/mushier :’)

people arent skeptical about the taste of vegan food tho .. they are skeptical about the health effects. veganism kills people . it can destroy health unless you are very very lucky . anyone can be weaned onto flavurs but health is the thing which matters . Veganism doesnt work yet for most people sadly .

In the hope it helps your girlfriend I’ll share my my ex-girlfriend’s experience after she was diagnosed with Hashimoto’s Thyroiditis a few years back.
First she went (mostly) gluten free, was pretty much vegetarian/vegan, only ate a little bit of dairy or fish on rare occasions. She was on a small dosage of levothyroxine and her results every few months with the doctors would vary – sometimes up and sometimes down.
About a year and a half ago she started (and then finished) a one year training in Ayurveda and has had access to a couple of experienced Ayurvedic doctors since then. It seems this has been the main thing which has helped her. Healing can be a deeper science than we’re often led to believe and working with someone experienced in natural and holistic healing modality could be something to consider.
Just taking medication will help reduce symptoms but it’s unlikely to get to the root of things. I’ve also heard of people with mercury fillings having them removed and the Hashimoto’s clearing up. I’m afraid I don’t have much to back that last claim up but I share it in case it may be a factor to consider.

You are the sweetest partner to be looking around to find ways to help your girlfriend deal with her health problems. I remember when I was diagnosed with Graves my (now ex) boyfriend treated me like a burden and then cheated on me LOL (I’m not looking for sympathy since I look back on it now thinking I dodged a bullet but it was interesting to note the differences between our situations haha). Keep being supportive for her, I’m sure she greatly appreciates it! 😊

You can make curry without coconut oil /fat/cream. Use 2 sprays of what ever neutral oil you use for tempering the spices. And a spoon of butter at the end. It only tastes 80% as good though.

@tansteel Quite so :nods:. I agree that it doesn’t taste as good tho’. Back in my younger days, you used to be able to buy coconut in blocks that you could then grate for use in curries. Haven’t seen it for sale in thirty years sad to say :(.

@Sukerkin haha where I’m from, I get fresh coconuts just outside my home. We do that grating thing for sauces not curries though. All that fat would seriously screw up with my diet so I only eat high calorie dense foods for the most part.

This is honestly one of the best vegan foods I’ve tried, I can’t have rice really or naan/Flatbread so I tried using a low carb cauliflower pizza crust in place of it and it was amazing. Here is how it turned out
