The first time I made this stew, I felt the same blast to my past as Anton Ego, in Ratatouille, experienced when he bit into the ratatouille. I was transcended to my Memaw’s kitchen where she used a stove-top pressure cooker to cook her beef stew on cold days.

The Gardein Beefless Tips work so well in this dish, too. You’ve got to give the recipe a try when you get a hankering for your Grandma’s cooking.

HERE’S ALL IT TAKES

2 small onions, chopped
2 large celery stalks, chopped
10 white mushrooms, quartered
3 garlic cloves, minced
5 small Russet potatoes, peeled & cubed
5 small carrots, sliced 3/4 inch thick
2 packages Gardein Beefless Tips

4 teaspoons VEGAN BETTER THAN BOUILLON NO-BEEF BASE
4 cups water for mixing with the vegan no-beef broth base

2 teaspoons liquid smoke
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon ground dry mustard
1/4 teaspoon ground bay leaves
1/2 teaspoon each salt & pepper

Directions for Instant Pot Owners
Press [Saute] to heat up inner pot, then add mushrooms, celery, and onion with enough broth to cover the bottom of the pan. Sauté the vegetables until the onions become translucent. If the inner pot becomes dry before the onion is tender, add a few tablespoons of broth. Add minced garlic, cook one minute.

Add potatoes, carrots, beefless tips, liquid smoke, oregano, thyme, mustard, ground bay leaf, salt, and pepper. Add remaining broth and stir to distribute spices evenly. Cover with lid then turn lid clockwise to lock into place. Align the pointed end of the steam release handle to point to “Sealing” to prevent losing any liquid.

Press [Slow Cook], use [-] button to adjust cooking time to 3 hours.

For vegan beef stew in a flash, press [Manual], use [-] button to adjust pressure cooking time to *3 minutes. Use either the quick-release or natural release method to release the pressure.

Note: Depending on the size of the potato chunks, 3 minutes of pressure cooking is the minimal cooking time. Going an extra minute can make a difference in cooking big potato chunks fork tender. Take advantage of the extra cooking that takes place while using the natural release method to reduce the pressure in the pot.

Serves 8.

can Jack Fruit be used instead of Gardien? I love my Instant Pot

Paula Settles says:

I tried this recipe and the beefy flavor was amazing! Unfortunately, the Gardein Beefless Tips are not our favorite. But we loved everything else, so we’ve decided to try it with chunks of portobello mushrooms instead. Soy curls would work too, I think. And I think I’ll add some sweet peas at the very end. The flavor is great!

Where can I get that beef list tried to cut did they sell it at Trader Joe’s or whole food

Robroy333 says:

I make mine with Jackfruit instead of the Gardein product. Just like Pot Roast:)~

Paula Settles says:

I’m making this right now. Had to sub a couple of things. I didn’t have any dried mustard or fresh mushrooms so I left that out. I have some leftover cooked spinach that I’ll add at the end. I think it might break down too much if I added it at the beginning. I subbed garlic powder for fresh garlic and added a little Worcestershire sauce! It smells heavenly! I do like my stews a little thicker, so I’m making a slurry to add at the end.

Paula Settles says:

The beef stew from my childhood was a little thicker. Can I make a slurry and addition at the end? We’re finally getting cold weather in DC. This will make a warm, hearty meal. Add a salad and voila!

I just made your recipe in my NEW iPot (which I LOVE) and your "beef" stew is fantastic! Just the right amount of liquid smoke. I did add about a 1/4 c of cooking sherry and 1 TBSP of vegan Worcestershire sauce in addition. I LOVE YOUR RECIPES!! So glad I found your channel on my plant based journey.
