Not great, really. No carrot in soffrito, why not use liquid off mince to add to stock? Why boil milk in separate pan to roux. Why no nutmeg or cloves in bechamel? Why oh why oh why! Middling domestic recipe that creates a lot of unnecessary mess.

YOU FORGOT TO SHOW THE STEP WHERE YOU PUT THE CHEESE ON TOP! what sort of cheese is it? some say mozzarella, others say parmiggiano (which seems very salty)
It’s just as good without the white sauce and using mozzarella instead imo. Easier to prepare as well.
When do you add salt, pepper and other seasonings to the Ragu?

I use Knorr beef stock pots to season the ragù.
And to season the béchamel, I’ll use vegetable stock pots.

He used 4 saucepans, food processor, sieve and utensils. That's not needed.
No spices whatsoever. It’s going to taste bland if you don’t put salt and pepper and herbs.
