not soaking legumes benefits
1.they keep those sugars that your gut bacteria feed from so after awhile your bloating and gas stops
2. you do not have to wait for your legumes to soak up tho this is not a big problem if you soak them in hot water.
negatives
1. the phytic acid they contain suppresses your body's ability to get the full nutritional value from them so soaking them removes quite alot of it.
2.sprouting them too removes the phytic acid completely and they have much more nutritional value.

don't take what i say as right do yoir own research and see what works for you everyone's different

Old Mexican trick for helping the bean fart issue is to soak (always) and also when you cook the beans to add a stalk of epazote. It's an herb you can get at a Hispanic market. You can also use a piece of Kombu (Japanese seaweed) for the same effect. It really works.

Instructions always say to soak beans "overnight" – so are people like cooking beans in the morning or something? Or are they putting them to soak and basically letting them sit there nearly 24 hours? I'm confused on this point.

I just got my Instant Pot yesterday. Preparing dried beans was top of my list for using the pot. I soaked Great Northern beans overnight and made them in the Instant Pot today for 8 minutes. They are perfect for my soup. This is a game changer for me. I love dried beans; no more canned for me. I seasoned them and they smell and taste great. Thank you so much!

The directions on the bean and lentils packet sais not to add salt in the beginning because it may not soften… is it an issue for you?
