As soon as it gets cold out I just want warm, comforting meals! This amazing veggie stew definitely checks all the right boxes for me. Comforting, delicious and can be made in one pot!

Amazing Veggie Stew Recipe:
4 potatoes
4 carrots
1 onion
4 celery stick
Chop veggies and sauté for 10-15 minutes using veggie broth.
Stir and add veggie broth as you go so it doesn’t stick.
4 cloves of garlic
1 tbsp thyme
1 tbsp rosemary
1 tbsp gar pow
1 tbsp onion pow
4 bay leaf
1 tsp ginger powder
Add spices to the bottom of the pot and sauté for 5 minutes.
Add 8 cups of low sodium veggie broth.
Simmer for 20 minutes.
Remove 4 cups of cooked mixture and blend.
Add back into pot along with:
1 cup of uncooked pearl barley (you can use white rice, lentils, pasta, quinoa)
3 cups (2 cans) of white Navy beans
2 cups frozen corn
Cook for another 20 minutes.
Add 2 Cups frozen peas and cook for another 5 minutes.
Remove from heat and allow to cool a bit so it thickens and set’s up.
Add salt to taste.
Enjoy!

This reminds me of Vegetable Stew from Kerala (South Indian state), that is if you add coconut milk and remove barley from this recipe. Do try that!
I made this, it’s absolutely delicious. Cost me around $15 to make. I make it once on Saturday and it lasts for lunch and dinner for whole week. The only thing I changed was adding dry lentils instead of barley because I’m GF.

PS you can make raw vegan mashed potatoes in food chopper: potato or sweet potato, kale, avocado and namu shoyu raw soy sauce. I saw it on healthy life when Markus interviewed 53 year old raw vegan bodybuilder. Cheers
Guys! It’s SOOOOOO good! I’m already making another pot (it’s only been a week since I ate the last of the first batch!). I found out that grated finger doesn’t NOT equal ginger powder! It’s SO much better with the powder 🙃

I keep a ziplock plastic bag in my freezer and all veggie scraps go in there. When it's full I dump it in a pan and fill it with water and make broth. It's usually super good because there's a huge variety of veggies in there, including a bunch of kale stems. Strain it and freeze it.
