Learn to cook Goan Curry – Vegetarian Recipe by Ruchi Bharani

In this episode, Chef Ruchi Bharani, makes simple to cook and quick to serve popular Goan Recipe – Goan Curry. Goan Curry that goes well with most of the Indian main course dishes. It goes well with steamed rice or roti.

Ingredients:
1 &1/2 cup steamed Vegetables (Potato, Cauliflower, French Beans, Carrots)
1/2 cup Tomato Puree
3/4 cup Coconut Milk
1/2 cup grated Coconut
4 Chopped Green Chillies
Curry Leaves
1 & 1/2 tbsp Tamarind Paste
1 tsp Garlic Paste
1 tsp Coriander Powder
1/2 tsp Cumin Powder
1/2 tsp Mustard Seeds
1/2 tsp Turmeric Powder
Coriander Leaves
Salt
1 big Onion Grated
1 & 1/2 tbsp Oil
1/2 tsp Ginger Paste

Method:
– Put oil in a heated pan, add mustard seeds to it.
– Once the mustard seeds starts crackling, put curry leaves in it and stir fry.
– Add the grated onion and saute the onion for about a minute.
– Now add garlic paste, ginger paste and fry the whole mixture till its light brown in color.
– Add the green chillies, tomato puree and mix everything well.
– Add cumin seeds, coriander seeds, turmeric powder, tamarind paste and cook all of these ingredients together for about 4/5mins.
– Add 1/2 cup of water and cook it in low flame for few mins
– Add the coconut milk and mix well.
– Add salt and grated coconut and steamed vegetables and stir to mix everything well.
– Add some more water and coriander leaves to garnish and the dish is ready to be served.

It is some curry but not Goan. Goan curry is red in colour from the Kashmiri chillies and very hot and spicy, with fish added in.
