Easy & Delicious Vegetarian Pie Recipe – Quick & Tasty
I was recently sent a Sunbeam Pie Magic pie maker so thought I’d whip up some tasty Vegan Veggie Pies to test it out. If you don’t have a pie maker you can still make these pies by using a muffin tin and your oven.
These pies are quick and easy, taste delicious and are really healthy too.

VEGAN VEGGIE PIE
INGREDIENTS
1 Tbs oil
1 brown onion
2 cloves garlic, crushed
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground turmeric
2 carrots, chopped
1 kumara, peeled, chopped
1/2 head cauliflower, cut into florets
1 cup water
1 Tbs vegan butter (eg Nuttelex)
2 Tbs plain flour
1 cup frozen peas
1 dollop of coconut yoghurt
1/4 cup chopped fresh coriander
Salt and pepper, to taste
Store bought vegan ready rolled pastry
METHOD
Heat oil in a large frypan over medium heat. Add onion, garlic and spices and cook until fragrant.
Add carrot, kumara, cauliflower and water. Bring to a simmer over low heat. Cover and cook over low heat until veggies are tender.
Add butter alternative and flour, mixing to combine. Add remaining ingredients, stir well.
Allow mixture to cool before assembling pies.
If you’re not using a pie maker you can use a muffin tin and cook the pies for around 15 mins in a preheated oven at 180 degrees celsius.

Thank you for your recipe, simple and easy to follow. My pies turned out yummy. I used a Kmart brand and was the perfect size.
It looks super yumm.. i being an indian would love to add some chopped green chillies and little bit of red chilli powder as well to add to the taste and spice it up more. ✨️🙏❤️

Know this was a long time ago, but to freeze the pies do you fully cook them in the maker first, then freeze them or just prep them? Also how do you defrost and cook them? 🙂
Could you make it in the oven with a muffin tin instead? To make some mini-pies. 🙂
