Ingredients:
150g of Fresh Parsley – £1.35
500g of Spaghetti – £0.50
Chilli Flakes – £0.85
3 Garlic Cloves – £0.30
Total Cost – £3.00
Method:
Boil a pan of water, add a generous amount of salt and add your spaghetti.
Finely slice 3 garlic cloves and your parsley (separating stalks and leaves).
Add 4 tablespoons of olive oil to a frying pan. Add the sliced garlic, the parsley stalks and 2 teaspoons of chilli flakes.
Once the pasta is al dente, reserve 8 tablespoons of the starchy pasta water. Drain the pasta and add it to the frying pan with the garlic and parsley.
Toss all together, gradually adding splashes of pasta water and the chopped parsley leaves.
Once everything is mixed in and the pasta is thick and almost creamy (from the pasta water), remove from the heat. Serve it up with extra chopped parsley leaves on top as a garnish. Enjoy!
