This Carrot and Potato recipe is a great way to add carrots to your diet. Not only is it delicious, it can be made in a jiffy. A quick and healthy weekday recipe. Enjoy!
Ingredients:
1 medium onion / 225g approx. / roughly equaling 1 cup
2 – 3 cloves of garlic OR 1 teaspoon of garlic powder
1 medium potato / 150g approx.
3 medium carrots / 400 – 450g approx.
1 – 2 jalapeno OR thai chilli OR chilli flakes
1/2 teaspoon turmeric (optional)
1/2 teaspoon salt or to your taste
2 tablespoon cooking oil
1/2 cup of water OR stock of choice
Garnish:
1/4 cup of cilantro OR parsley leaves (finely chopped)
1 teaspoon extra virgin olive oil
