Baked Vegetable Patties (Grain-Free & Dairy-Free)
INGREDIENTS:
2 Medium Zucchini (300 g) – Grated
1 Medium Carrot (200 g) – Grated
1 Medium Potato (150 g) – Grated
1 Small Onion (100 g) – Finely Chopped
1/2 Cup Parsley OR Cilantro Leaves – Finely Chopped
1/2 Teaspoon Salt
1/2 Cup Almond Flour/meal (50g) OR Roasted Ground Walnuts
1/4 Cup of Nutritional Yeast OR Cheese of choice
2 Tablespoon Ground Chia seeds OR Flax Seeds OR 1 Egg
1/2 Teaspoon Cumin Powder
1/2 Teaspoon Garlic Powder OR Fresh Garlic (OPTIONAL)
1/2 Teaspoon Cayenne Pepper (OPTIONAL)
Salt to Taste
1/4 Cup of Extra Virgin Olive Oil (Organic Cold-Pressed) OR Oil of Choice

I used garam masala, walnuts and rice flour as dry ingredients and they turned out a little bit bitter but i ate them with big spoon of yogurt each and they turned out good.
Csn we use cabbage instead of zucchini and all purpose flour ?
Great recipe, made it with left over broccoli, carrot, butternut squash, onion and celeriac, the spice mix works really well to produce a tasty end product.

Looks good, finally something with almond flour that’s easy and May taste good.
I don’t like zucchini much; but, in this might make tasty and seasonings being in my court; maybe will give me excuse to eat vegetables as I don’t eat much.

Great recipe, was wondering if it was okay to use a food processor, or will that ruin the texture and consistency you're looking for?
Yum. I use these very similar ingredients to make my Salmon Patties. Sooo good. Yes. Soften the veggies, then add Salmon, sautee gently. Use whatever sauce you choose. Thank you for you info.
