This was really good. I didnt have coriander or masala, so I just added sage & it was awesome. I loved the crispness. I hate it when I fry my eggplant & its full of oil; this coating prevented that. Definitely making this for my 8 yr old but omitting the chili. Ty again.

I’ve really enjoyed this and so easy. Always wanted to be able to master what to do with aubergines. Wondering if you can use the marinade again after being in the fridge for a few days?
For a couple of days not a problem at all you can use the leftover marination.
But, I always prefer to use a fresh one, thanks for asking and thanks for watching happy cooking.
