This has become my favourite go-to Covid lockdown recipe. I add chilli oil (or chilli's), some fresh mushies, a bit of tomato paste. And have found that boiling up dried lentils is a real treat – if you could be bothered. Yum.

I he calls it bolognese, people will shout out that it is not! While if it was called something else (like chuchu or whatever) the same people will say it is meat-free bolognese.

I'm not a vegetarian but I'm realizing eating healthy, vegetarian food makes me feel great and energized, rather than tired and lazy. So I try to eat more healthy and mostly vegetarian in my day to day but I still enjoy a good steak on a lazy day when I don't have anything that needs to be done
