Vegan Air Fried Spring Rolls

Disclaimer: I know this is not an authentic recipe, but it is a delicious one. I used what I had on hand and I advise you to do the same. Play around in the kitchen, get creative, and become inspired!

Recipe:

-10 oz White Mushrooms
-1 Sweet Onion
-2 Tbps of Minced Garlic
-1 Bag of Trader Joe’s Broccoli Slaw
-1 Bag of Red and Green Cabbage, and Carrots
-Rice Paper
-2 Tbsp of Soy Sauce
-2 Tbsp of Asian Seasoning (ginger, garlic, sesame seeds)
-Toasted Sesame Seeds

1.Cook Mushrooms, Onion, and Garlic with a little oil for 10 mins (or until soft)
2.Add Broccoli Slaw and Cabbage, Soy Sauce, and Asain Seasoning, and cook for 5 more minutes
3. Taste and add more seasoning as needed
4. Take off heat and add Toasted Sesame Seeds
5. Submerge Rice Paper into water for about 15 seconds
6. Scoop the veggie mixture onto Rice Paper and roll, tucking in the sides first.
7. Cook 4 at a time in air fryer at 360 degrees for 15- 20 minutes, flipping halfway through.
8. Serve right away with a side of sweet chili sauce.

Looks delicious! But, I cannot find that Asian Seasoning, ANYWHERE. :'(

Looks great! You could substitute water for the oil and make it WFPB. Add tofu for protein? Trader Joe's Sweet Chile sauce is delicious! Some sort of peanut dipping sauce would also be tasty without the added sugar. I look forward to trying this! Thanks!
