Most days, I practice intermittent fasting but on weekends, I like to splurge a little. Here is a full day of eating while being on a vegetarian keto diet (Breakfast, Lunch and Dinner). Comment below if you’d like to see more of these videos or what you eat in a day.

Low Carb Keto Biscuits | Gluten Free | Easy to Keto Recipes

If you are not a fan of the overly eggy keto biscuit and bread recipes, you are in for a treat! Try this easy low carb Keto Biscuit recipe and you'll see that the strong egg flavor is not necessary to enjoy a truly moist and delicious biscuit. Perfect on it's own, with a slab of butter or as part of a breakfast sandwich (bacon/sausage, egg, cheese), your breakfast will never be the same again!

Ingredients: (makes 4-5 biscuits)

Almond Flour (fine, blanched) - 1 cup
Baking Powder - 1 tsp
Xanthan Gum - 1 tsp
Himalayan Salt - 1/2 tsp
Erythritol - 1 tsp (optional)
Butter - 2 Tbsp, cold
Egg Whites - 2
Water - 2 Tbsp

Method:
1. Sift Almond Flour, Baking Powder, Xanthan Gum, Salt & Erythritol into a mixing bowl.
2. With a fork, press cold Butter into the flour mixture until crumbly.
3. In a separate bowl, whisk Egg Whites and Water until frothy.
4. Mix Egg Whites with Flour until combined. Do not overwork.
5. Keep mixture in the refrigerator for 15 - 20 minutes.
6. Divide out mixture into approx 4-5 portions onto a parchment lined baking sheet. A round cookie cutter works well to form a round biscuit shape.
7. Bake in the oven for 15 minutes at 400 F.

I’ve been a lacto-ovo vegetarian for over 30 years . I am about 10-15 lbs overweight and post menopausal. I tried keto for the past 6 months. I initially lost about 7 lbs ( in first 2 months) but no further weight loss. I think I was over doing cheese and heavy cream ( which I read is better than half and half for keto). I got discouraged around thanksgiving and went off keto. I plan to get back on the keto wagon , and hope your channel can help me get more variety and nutritious options.
