We are in quarantine so I was missing some of the ingredients but it still worked out. I used pecans instead of walnuts. I used wheat tortillas instead of corn. It was too spicy for my younger kids. I think maybe I can just cut back on or cut out the cayenne next time. Also, it would be helpful to have the instructions to soak the cashews and cook the carrots & potatoes first. The finished recipe was really yummy! Thank you!

Nice recipe, but how anyone can think those scary bright red talons doing the cooking are in any way attractive or even practical is completely beyond me. Yuk!
