This is one for the savoury lovers! Deliciously stuffed potato mash with your favourite vegan cheese! This finger food really is as simple as it sounds and so addictive too!
Ingredients-
1 kg potatoes
2 Tbsp nutritional yeast
2 tsp garlic powder
2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
2 Tbsp vegan butter or margarine
1/2 cup all purpose flour
100 gm vegan block cheese cute into cubes
1 cup plant based milk
2 Tbsp cornflour
1 and 1/2 cup bread crumbs
vegetable oil for shallow frying

you could probably wrap some wilted spinach around the cheese and then cover with potato to kind of make a spinach and ricotta….without the tomato sauce…..ok perhaps not, healthier though. that mix without the cheese could also be shaped into some kind of schnitzels 😀

As a kid we used to say Argh Sheesh instead of swearing lol.
Just as a general tip for people, when cooking potatoes for mash, don't cut the shapes too small, if you do you will find they end up with a weird grainy, watery texture and always start from cold water. The size that Annie cut them are a great balance of cooking time and great tasting mash.
Ricebran oil is a healthy suitable oil.
