How To Make Vegetarian Ramen (Recipe) {Vegan Adaptable} ベジタリアンラーメンの作り方(レシピ)

{Vegan Adaptable} Spicy and rich Vegetarian Ramen recipe made with soy milk and vegetarian dashi. This ramen broth is super rich and milky, and it just might trick you thinking it's Tonkotsu broth!

Prep Time: 5 mins
Cook Time: 15 mins
Yield: Serve 1 (If you want to make more than one serving, simply multiply the quantities of ingredients by the number of servings you wish to make.)

Ingredients:

For Vegetarian Dashi

¾ cup water
1 1”x2” (2.5 x 5 cm) kombu
1 dried shiitake mushroom

For Soup

1 Tbsp. sesame seeds
2 cloves garlic
½" ginger
Scallion (white part)
2 tsp. sesame oil
2 tsp. chili bean paste
2 tsp. miso
1 Tbsp. sake
2 tsp. soy sauce
1 cup unsweetened soy milk
½ cup dashi
½ tsp. Kosher salt
Dash of white pepper

For Ramen

1 serving ramen noodles

For Ramen Toppings

½ Ramen egg (RECIPE: check my video) (omit for Vegan)
Spicy Bean Sprout Salad (RECIPE: check my video)
Homemade vegetarian kimchi
Corn
Scallion (green part)

    • … no one is stopping you from using dairy milk here. But FYI soy milk has a better flavor in this application, its more delicate flavor balances well with the dashi broth. I’m sure it was a deliberate decision.

      Yellyman then you should check other vegetarian youtuber’s recipe. In most Asian cultures the line of vegetarian & vegan is very thin. It derives from buddhism. Some are following more lenient version while others follow stricter version to the point they don’t even eat onions, garlic & allium. Besides only you think that the dairy industry isn’t killing the calves. In Japanese cuisine most common plant based milk consumed is soy milk. Cow’s milk didn’t wasn’t even consumed until end of WW2. If you see sonething you don’t particularly agree with just replace it with what you want. If you want to see more vegetarian dishes with milk, cheese & eggs then go check those Europeans recipe videos.

      @Ali yeah, plants can’t feel pain and we are not even killing them, we are just taking their products. Infact, if we didn’t take them, the fruit itself will fall off the tree. Lol

      @Sepanta Jan humans can survive with eating plants. But lions are carnivores. They can’t eat plants. But us, we have two options. 1. Hurting animals and eating them 2. Taking products of plants and also planting more which is good for the environment.

      Which one would you select? No2 ofc.
      Because lions are wild animals, they don’t have a brain like us. So it’s their instincts to eat meat and its surviving. They survive by hunting and eating. But us, we used to do that in stone age. But now, we are developed. We don’t have any nutritional needs to eat meat cuz everything is available in plants and we have great brains to think what is correct and wrong. Infact, humans are the only species to drink milk even in adulthood which is unnecessary for our body. But I’m trying to quit dairy products but I can’t resist myself. I’m only 14 (it’s not about age ofc, but I can’t resist icecream etc. So I always try to limit and eat diary products whenever i can’t resist)

      I even tried eating tofu. It’s tasty. Braised tofu curry is amazing.

      Ramen is food but chopsticks are its emotion. together, they are perfect. I always wanted to eat with chopsticks from childhood. I even told mom I’ll travel to China (neighbouring country) to eat with chopsticks lol

    I made this just a little modified, I used aka (Red) miso which I HIGHLY reccomend and added a little white onion, rawits, mirin and sesame seeds to the miso paste, I also used way more than in the Video, but I also made more in general. I let the kombu dashi soak for about 2 hours so it’s more intense and added more dashi to it than in the Video. I did everything else about the same. I made it nice and spicy and me and my bro loved it!
