milk. a little at a time yes but more than that….no where near enough cheese there. you need about 80 to 90 grams

…hmmm tried it your way and I had to get out my electric whisk to get the lumps out!
But would that not result in there being too much milk in the pot thus preventing the lumps from being beaten out because they have much space to move about in- I learnt from trial and error and there were a lot of errors lol
Actually, that's not true… you have to pour the milk all at once… the thermal shock between the "rue" and the cold milk will prevent any lumps.
Fantastic, I have a practical assessment on this next week for my chef course. Talk about good timing!
