Air Fried Chicken Egg Rolls
Ingredients:
2 lb’s of ground chicken
1 cup of chopped cabbage
1 carrot chopped thin
1 half medium onion chopped
3 average garlic cloves minced
½ tbsp. of ground ginger
2 tbsp. Soy Sauce
Salt and Pepper for seasoning
Egg Roll Wraps
1 Egg beaten
Heat up a skillet on medium heat and oil with Extra Virgin Olive Oil. Place the ground chicken in the skillet and add garlic, salt, pepper, soy sauce, and ground ginger. Cook your chicken for 5-6 minutes, the ground chicken cook fast so stir occasionally to evenly cook. Once cooked, add cabbage, carrots and onion and cook until carrots are medium tender. Optional ingredients chili flakes, chopped celery, chopped cilantro, anything you feel that would be great with it.
Take your egg roll wraps facing as a diamond shape towards you and brush with egg wash on all four sides. Take two scoops of the chicken filling and place it in the center of the left and right point. Square up your filling with the spoon. Take the bottom point and roll over and fold the left and right point using the egg wash to stick to the touching piece of the wrap. Roll over to the top of the roll and make sure everything is nice and snug. Do as many egg rolls to how many you’re filling can do.
Preheat your air fryer to 400 degrees. Place your egg rolls in the air fryer and cook at 400 degrees for 2 sessions of 6 mins or 3 sessions of 4 mins flip egg rolls between the sessions. Be sure to spray a little oil in the beginning of the cook to help crisp the exterior of the egg rolls.
Serve with your favorite dipping sauce.
